I must be a boring person because I have nothing fun to blog about. I did make a delicious dinner for IJ and I last night. I mixed fat free greek yogurt with reduced fat mayo, red curry powder, cayenne and salt. I used it to coat pounded out chicken breasts which I then coated in panko breadcrumbs. Bake at 450 for about 15 minutes. I used the same spices on some sweet potato slices and bake those at the same time and voîla, dinner.
I don't usually cook dinner because Iver gets home before me but I worked from home yesterday so I gave him the night off. We topped it off with blueberry greek yogurt pops that I bought at Shaw's. Not too sweet but very tasty for no fat and 7 calories.
